This refreshing drink is my go to for serving guests in the summer when blueberries are in season. The Blueberry Mint Fizz is a delicious nonalcoholic drink but can easily be made into a cocktail with the addition of your favorite spirit. It is perfect way to offer a good option for either when entertaining.

Blueberry Mint Fizz

Ingredients
- 1 cup fresh blueberries
- 1 cup fresh mint
- 8 ounces honey syrup
- 2 ounces fresh lime juice
- 40 ounces club soda or sparkling water
Instructions
- Place the blueberries and mint in a small pitcher or bowl
- Muddle until well mashed.
- Add the honey syrup and fresh lime juice and muddle together.
- Divide the blueberry mixture between 4 glasses.
- Add ice to the glasses.
- Add 8-10 ounces of club soda to each glass and stir.

Honey Syrup Recipe
Ingredients:
- 1 cup honey
- 1/2 cup water
Directions:
- Combine the honey and water in a small saucepan over medium heat.
- Bring to a simmer and let cook for 2 minutes or until combined.
- Remove from the heat and let cool.
- Store in an airtight container for up to 2 weeks.
