Peanut Butter and Açai Smoothie

Açai (pronounced ah-SAH’-ee) is a superfood that originated in the Amazon rainforest of Brazil. These dark purple berries have one of the highest concentrations of antioxidants known to man. Adding them to a smoothie is a great way to incorporate them into your diet.

You can find frozen packets of unsweetened açai in the freezer section of most grocery stores. To add the açai to a smoothie you can partially thaw a packet in the refrigerator overnight, or run a packet under warm water and break up the frozen puree into chunks. Peanut butter and açai combine together well, creating an almost chocolate flavor.

If you prefer, you can make an açai bowl with this recipe by reducing the amount of almond milk for an ice cream-like consistency. Then use your favorite fruits and other toppings to create the bowl that’s right for you.
